Onion Mixture |
Ingredients
- 1 tablespoon olive oil
- 1 yellow onion, diced
- 1 garlic clove, minced (I use Tastefully Simple's Garlic Garlic)
- 1 bay leaf
- 1 tablespoon chopped fresh flat-leaf parsley
- 1 teaspoon chopped fresh thyme
- 1 pound lean ground beef
- 1 large egg, lightly beaten
- 6 tablespoons dry bread crumbs
- 6 tablespoons ketchup
- 1.5 teaspoons Worcestershire sauce
- .25 teaspoon cayenne
- 1 teaspoon salt
- .5 teaspoon freshly ground black pepper

- Preheat oven to 375*F. Line a large rimmed baking sheet with parchment paper and spray with cooking spray.
- In a large skillet, heat 1 tablespoon olive oil. Add onion, garlic, and bay leaf. Cook over moderate heat, stirring a few times, until the onion is tender - 6 minutes.
- Add parsley and thyme and stir for 5 minutes.
- Scrape onion mixture into a bowl and cool. Remove bay leaf.
- In a large bowl, combine the meat, egg, bread crumbs, 4 tablespoons ketchup, Worcestershire sauce, cayenne, salt, pepper, and onion mixture. Blend with your hands. Stop blending as soon as it's all well combined.
- Form a loaf on the parchment paper (or you can use a 8x4 loaf pan). Coat with remaining ketchup.
- Bake for 1 hour until thickest part is 165*F.
- Let rest for 10 minutes, then serve!
